Three rules
- Ratio: start at 15 g of coffee for 250 ml of water.
- Water: just off the boil, about 30 seconds after the kettle clicks.
- Fresh: grind just before you brew, and finish an opened bag within a month.
French press
- Akio coffee
- Medium roast
- Recipe
- 15 g coffee, 250 ml water
- Grind
- Coarse, like sea salt
Add hot water just off the boil, stir, put the lid on and wait 4 minutes. Press slowly and pour straight away so it doesn't keep brewing.
Moka pot
- Akio coffee
- Dark roast
- Recipe
- Fill the basket level, don't tamp
- Grind
- Fine, but coarser than espresso
Fill the base with hot water up to the valve, put it on medium heat with the lid open, and take it off the moment it starts to gurgle. Top with hot milk for strong milk coffee.
Pour-over
- Akio coffee
- Light roast
- Recipe
- 15 g coffee, 250 ml water
- Grind
- Medium-fine, like table salt
Rinse the paper, add coffee, pour 40 ml of water and wait 30 seconds, then pour the rest slowly in circles. Aim to finish in about 3 minutes.
Cold brew
- Akio coffee
- Light or Medium
- Recipe
- 100 g coffee, 1 litre cold water
- Grind
- Very coarse
Stir, cover and leave in the fridge for 16 to 18 hours. Strain through a paper filter. Serve over ice, diluted with water or milk to taste. Keeps for about a week.
Espresso
- Akio coffee
- Medium or Dark
- Recipe
- 18 g in, about 36 g out
- Grind
- Fine
Aim for 25 to 30 seconds. Too fast and sour: grind finer. Too slow and bitter: grind coarser.
Drip bags
- Akio coffee
- Any
- Recipe
- One bag, 150 to 180 ml water
- Grind
- Pre-ground
Hang the bag on your cup, pour water just off the boil in three or four slow pours, let it drain, and remove. About three minutes.
Questions
What is the best coffee to water ratio?
A good starting point is 1:15 to 1:16, about 15 to 16 g of coffee for 250 ml of water. For espresso, about 1:2: 18 g of coffee for 36 g in the cup.
Which Akio coffee should I buy for a French press?
Medium (70/30 Arabica and Robusta). It's balanced, and good black or with milk.
Which Akio coffee is best for a moka pot?
Dark, our 60/30/10 house blend. It's bold enough for strong milk coffee.
How do I make cold coffee at home?
Brew coffee at double strength (French press or moka pot), cool it, then shake with ice and cold milk. Add sugar while the coffee is hot so it dissolves.
How should I store coffee beans?
In an airtight container away from light, heat and the fridge. Grind just before brewing if you can, and use the bag within a month of opening.
